This filing one-pot vegan chili is good on a cold day, easy to throw together and looks pretty good in the bowl.

Recipe Ingredients for Easy 3-Bean Chili

1 serving Olive Oil
1 medium White Onion
3.5 oz Pasilla Chile
2 clove Garlic
1/4 cup Coriander Leaves
1 tsp Chili Powder
1 tsp Quality Spices Cumin
15 oz Kidney Beans
15 oz Black Beans
15 oz Beans, Pinto, Mature Seeds, Canned
14.5 oz Diced Tomatoes, No Salt Added
0.13 cu Bulgar Wheat
1 pepper Peppers, Jalapeno

Recipe Directions for Easy 3-Bean Chili

  1. Put olive oil in 3-4 qt pot on med heat.

  2. Chop and add in onion

  3. Chop and add in poblano or pasilla or green bell

  4. Mince and add in garlic

  5. Cut and add in cilantro

  6. Add chili powder and cumin (more or less depending how spicy you want it)

  7. open all the cans of beans and tomatoes and them right into the pot

  8. add the bulgar wheat and let it come to a boil then turn it down and let simmer about 25 minutes or so until the bulgar wheat is soft

  9. serve warm with garnish of sliced jalapeno or your choice of avacado or sour cream or diced green onion or sprig of cilantro.
