Recipe Ingredients for Eastern Mediterranean Lentil Soup

3 serving Extra Virgin Olive Oil
16 stalk, medium (7-1/2" - 8" long) Celery
3 medium Carrots
2 medium (2-1/2" dia) Onions
12 cups water
450 grams Lentils
1/2 cup Rice, Brown, Medium-grain
15 grams Lemon Pepper
1 tbsp Seasoned Salt
1 1/2 tsp Spices Ground Black Pepper
2 1/2 grams Ground Cumin
3 teaspoon Juice

Recipe Directions for Eastern Mediterranean Lentil Soup

  1. Add the olive oil to a stockpot. Heat teh oil over medium-high heat.

  2. Add teh carrots, celery and onions and saute them for 10 minutes or until they have begun to turn tender and the onions have begun to caramelize.

  3. Add the red lentils, the rice and the water to the pot. Stir to combine the ingredients. Cover the pot and allow the ingredients to come to a boil.

  4. Turn the burner to medium-low. Simmer the soup for 25 minutes, or until the lentils are soft. Stir occasionally.

  5. Remove cover and add the lemon pepper, seasoned salt, salt, pepper, and cumin. Continue simmering for 20 minutes.

  6. Add the lemon juice and stir it in.
