Recipe Ingredients for Easter Linzer Tarts

2 stick butter
1 egg yolks
1/4 tsp. vanilla
1 1/3 c. flour
1/2 c. flour
2/3 cup white sugar
1 c. ground almonds
1/8 teaspoon ground cinnamon
215 grams jam
1/3 cup confectioners' sugar

Recipe Directions for Easter Linzer Tarts

  1. Beat sugar and butter until creamy. Add egg yolks, vanilla, 1 1/3 cups flour. Mix until a ball forms. Dust with remaining flour. Refrigerate for 1-2 hours. Cut dough into 2 sections. Roll out into 1/8 - 1/4 inch thick sections. Cut using 1.5 inch bunny and tulip cookie cutters, 45 bottom pieces - roll out remaining dough and use again cutting 45 top pieces.

  2. Place on ungreased cookie sheet and bake at 350 degrees about 6-8 minutes (until very lightly brown). Leave on sheet until cool. Fill bottom piece with apricot or raspberry preserves. Cover with one top piece. Sprinkle with confectioners' sugar and enjoy.
