Recipe Ingredients for East West Beef Curry

2 tsp olive oil
3 lbs stewing beef
2 tbsp curry powder
1 tbsp coriander
1 tsp cumin
1 tsp dry mustard
2 cup diced onion
2 cups chopped red pepper
1/2 cup green chilies
2 cups diced tomatoes
2 cloves minced garlic
10 oz beef broth
2 tbsp rice vinegar
150 ml light coconut milk
1 tbsp corn starch

Recipe Directions for East West Beef Curry

  1. brown stewing beef in small batches

  2. place prepped beef in frying pan and spray with oil so that it is coated. Sprinkle spices on meat and simmer 2 minutes. Transfer to slow cooker.

  3. in slow cooker, add all ingredients except coconut milk and mix.

  4. cover and cook 4-6 hours on high

  5. stir in coconut milk and heat for 5 minutes, then serve.
