light muffin, great for quick breakfast on the run

Recipe Ingredients for easiyo yogurt berrymuffins

1/2 cup honey
1 egg, well beaten
1/4 cup oil
1 cup yogurt
1 cup wheat flour
1 cup all purpose flour
1 tsp baking powder
1/2 tsp salt
1 cup mixed berries

Recipe Directions for easiyo yogurt berrymuffins

  1. Mix together honey, egg, oil and yogurt.

  2. Sift flour and salt and add to batter.Gently fold in fresh or canned berries (very well drained) while mixing flour into liquid ingredients. Do not beat.

  3. Mix with a few swift strokes ? the muffin batter should be only just mixed and a little lumpy.

  4. Spoon the mixture into a well-greased muffin tray, pushing it off with spoon held low to avoid stretching the batter.

  5. Bake in a preheated moderate oven 180C for about 20 minutes.

  6. Serve warm. These freeze well. makes 12
