This rich, spicy, and bitter cocoa drink is my take on the original hot chocolate - known to pre-Columbian America as xocolatl (bitter water) or chocolatl (cocoa water). It's not a faithful reproduction - the original was a paste of cocoa beans and corn meal dissolved in water. Since commercially available cocoa powder lacks the rich cocoabutter of freshly ground beans, I use milk as a base. This beverage falls somewhere between semi-sweet hot chocolate and a rich latte. It also packs a spicy chili punch you won't find in either.

2 cups Unsweetened Chocolate Almond Breeze
3 tbsp boiling water
3 tbsp Hershey's cocoa powder
1/4 tsp ground red pepper
1/4 tsp cinnamon

Recipe Directions for E Microwave Spicy Unsweetened Hot Cocoa Recipe (Dairy-Free)

  1. Combine all ingredients except Almond Breeze in a microwave-safe large (2 cup) coffee mug. Mash with a fork to form a thick paste.

  2. Add Almond Breeze in half-cup increments, stirring thoroughly after each addition to dissolve as much of the cocoa mixture as possible.

  3. Heat the drink in one-minute intervals until hot. Stir after each minute to dissolve cocoa paste.
