Second favorite snack is a big plate of dusted broccoli. I saw the recipe about 10 years ago in a magazine as "dusty cauliflower" -- then Alton Brown did it with broccoli on Food Network's Good Eats. : Lots of flavor, really filling, and works with broc, cauliflower, yellow squash, zucchini, sliced onions & peppers, drained tomato slices -- even halved Brussels sprouts!

Recipe Ingredients for Dusty Veggie Snax

4 carrots
2 cups broccoli
2 zucchini
1/3 cup panko bread crumbs
1/3 cup parmesan cheese, grated
1 Pam spray

Recipe Directions for Dusty Veggie Snax

  1. Steam about a pound of broccoli tops until just barely tender,

  2. then spritz it lightly w/ melted butter and

  3. toss in a mixture of toasted panko bread crumbs, salt, pepper, and parmesan.

  4. It takes about 1/3c total of the bread crumb mixture.

  5. Then spread out on a Pam'd cookie sheet and

  6. bake it until toasty (about 10-12min at 350)
