Recipe Ingredients for Dusted Pork Cutlets

1 egg
1/2 cup cornmeal
1 pound pork
1 tbs. extra-virgin olive oil
2 tbs. balsamic vinegar
1/4 pound raisins, unsweetened

Recipe Directions for Dusted Pork Cutlets

Crack egg into a pie plate. Lightly whisk egg with a fork. Place cornmeal in a large pie plate. Dip each pork cutlet into egg, then into cornmeal evenly coating all sides. Heat oil in a large skillet. Add pork cook 4 minutes on each side. Remove pork to plate and set aside. Add vinegar raisins and two tablespoons water to skillet. Simmer 10 min, deglaze as necessary. serve 4 ounce pork with 1/3 cup raisins.
