Recipe Ingredients for Dumplings: Veal Filling

1 pound ground veal
1 pound shredded cabbage
1 tablespoons ginger, grated
2 tablespoons water
2 scallions
1/4 cup soy sauce
1 tablespoon sherry wine
2 teaspoons sesame oil
1 teaspoon salt

Recipe Directions for Dumplings: Veal Filling

  1. Blanche cabbage until wilted (use a strainer in a pot for ease of removal) Strain cabbage, using your hands to squeeze out all liquid.

  2. Meanwhile place ginger in a small bowl with water and let steep a few minutes. Finely chop scallions.

  3. Place veal in a large bowl. Add cabbage and scallions. Place a small strainer over the bowl and pour the ginger into the strainer pressing to squeeze out all the juices. Discard ginger left in strainer.

  4. Add the soy sauce, sherry, sesame oil, salt and pepper to the bowl.

  5. Place a teaspoon of filling onto a wonton wrapper. Using a beaten egg white, brush 2 adjoining sides and fold up to form a triangle, pressing down to seal. Wet one bottom corner of triangle with egg white and press to the other bottom corner to form a dumpling. (Can be frozen in a single layer until ready to boil)

  6. Bring a large pot of water to boil. Add salt and then add dumplings a few at a time and boil until they rise to the top and stay there for about 3 minutes (5-7 minutes total) Drain and add to soup.
