Dukkah is a dry mixture of nuts and Middle Eastern spices. It is popular throughout the Middle East and has become a popular bar snack in Australia and New Zealand. Traditionally, dukkah is eaten by dipping bread into olive oil and then the spice mixture. In this recipe, it is paired with sweet grapes and a tangy cream cheese mixture for a simple and stunning appetizer. -Adapted from the California Table Grape Commission

Recipe Ingredients for Dukkah-Dipped Grapes

3 pounds grapes
3 cups cream cheese
1 cup mascarpone cheese
1 cup heavy cream
1 salt to taste
3/4 c almonds, whole blanched
3/4 c hazelnuts
1/2 c coriander seeds (scant)
1/4 c cumin seeds
6 tbsp sesame seeds

Recipe Directions for Dukkah-Dipped Grapes

  1. 1. Grapes -- destemmed and rinsed

  2. 2. Cream Cheese Spread -- In a large bowl, combine cheeses; add only enough heavy cream until you have a smooth, spreadable consistency. Salt to taste.

  3. 3. Dukkah -- In a 300-degree oven, roast the nuts for 25 minutes. Let cool. Roast the coriander and cumin for 10 minutes and the sesame seeds for 3. Let cool. Grind seeds coarsely. Grind nuts coarsely. Add spices to nuts.

  4. Place each of the three ingredients in separate bowls. Smear a grape with some of the cream cheese mixture on one end and then dip in the dukkah. Guests can assemble each dukkah-dipped grape themselves or you can prepare them ahead of time and serve on a platter.
