1 duck (2 pounds ) breast
3 tablespoons olive oil
1 1/2 pounds potatoes
2 tablespoons clarified butter
3 artichokes
4 tablespoons lemon juice
1/2 cup flour
3 parsley sprigs
2 oranges
1/2 cup white wine vinegar
1/3 cup sugar
2 teaspoons orange juice
1 1/4 cup chicken stock

Recipe Directions for duck in orange sauce revised

  1. preheat the oven to 325 degrees F.

  2. season the duck with salt and pepper.

  3. drizzle a little oil into an ovenproof pot and color the duckling all around. put a tight- fitting lid on the pot and cook for about 1 hour 15 minutes in the oven.

  4. prepare the sauce. cut fine julienne strips in the orange zest and blanch them three times.

  5. place the vinegar and sugar in a saucepan.

  6. slowly bring to a boil and reduce until it reaches a syrupy consistency. deglaze with orange juice and reduce again, and add the thickened chicken stock and julienned orange zest. season with salt and pepper.

  7. wash, peel, and rinse the potatoes. cut them into cubes, sautee them in clarified butter, and season with salt.

  8. turn the artichokes. squeeze them with lemon juice over them and cook them in a blanc. cut them into cubes, saute them in clarified butter, and season with salt.

  9. combine the two vegetables and scatter chopped parsley over them. cut the duck into thin strips and pour sauce over.

  10. add the sauteed vegetables and garnish with orange slices and segments.
