Recipe Ingredients for Drunk Chicken

16 oz Chicken, Breast, Meat Only
0.25 medium (2-1/2" dia) Onions
4 clove Garlic
2 1tsp Olive Oil
0.25 cup Lime Juice
1 ounce Tequila, 80 Proof
1 tsp unpacked Sugars, Brown
1 fl oz Water
0.5 tsp Salt, Table
1 pepper Peppers, Jalapeno

Recipe Directions for Drunk Chicken

  1. Purée onion through to pepper in a blender until smooth.

  2. Do a shot of tequila. You know you deserve one after that long day....

  3. Spray slow cooker with cooking spray.

  4. Place chicken breasts in slow cooker, sprinkle with pepper, top with purée, turning chicken to coat.

  5. Cook on high for 3.5 hours or low for 5-6.

  6. Grab 2 forks, and shred away, mixing the chicken up with the delicious puree.

  7. Serve with a fresh garden salad, spanish rice, or rolled up in a tortilla. You could also use this as a filing for enchiladas, flautas, or quesadillas! Double the recipe and freeze half for another time.
