Recipe from relishmag.com. This chili is super in every way; it can be made ahead, is super tasty and, unlike much football party fare, is brimming with super nutritious ingredients high in fiber, vitamins and minerals.

Recipe Ingredients for Dried Cherry Chili

2 c low-sodium chicken broth
4 oz dried tart cherries
1 T olive oil
1 c chopped onion
1 T fresh chopped garlic
1 lb ground turkey
1 red bell pepper
1 T chili powder
1 t chili powder
1 1/2 t ground cumin
1 t ground coriander
1 t dry mustard
1/2 t dried oregano
4 c canned tomatoes
16 oz black beans
1/4 c chopped cilantro

Recipe Directions for Dried Cherry Chili

  1. Heat 1 cup of broth. Place chopped cherries in small bowl. Add hot broth to cherries and set aside.

  2. Heat olive oil in a 4-quart saucepan over medium heat. Add onion; saute about 5 minutes until onion is soft. Add garlic; cook 1 minute. Do not brown garlic. Add turkey; cook until it is no longer pink.

  3. Cut red pepper into 1/4-inch pieces, blacken slightly in olive oil over medium heat; add to mix along with chili powder, cumin, coriander, mustard and oregano. Cook over medium-high heat, stirring occasionally, about 2 minutes. Add tomatoes (substitute fire roasted tomatoes to enhance the overall flavor) and remaining broth; bring to boil. Reduce heat; simmer, uncovered, about 5 minutes.

  4. Stir in beans, cilantro and cherry mixture. Continue cooking until thoroughly heated. Serves 8.
