I simmer until the veggies are tender and most of the liquid has evapourated, this concentrates the flavour. I then make samosas using whole wheat tortilla halves. Bake them in the oven for 4 mins each side at 400 F. Serve warm or cold with a little chutney.

Recipe Ingredients for Drew's Chick Pea Curry Samosas

1 tbsp olive oil
1 medium onion
3 oz celery
1 carrot
1 oz jalapeno
2 oz red pepper
1 fresh tomato
1/3 can tomato paste
1 tbsp curry
1 tsp cumin
3 cloves garlic
2 oz fresh ginger
19 oz chick peas
1 pinch Pepper
1 oz cilantro
1 cup chicken broth
6 whole wheat tortillas

Recipe Directions for Drew's Chick Pea Curry Samosas

  1. Sautee onions

  2. Dice all vegetales and add

  3. Sautee until they begin to soften

  4. Add tomato paste diluted in a cup of hot chicken broth

  5. Add all spices and seasoning

  6. Simmer to combine flavours

  7. Add can of drained chicke peas.

  8. Simmer until almost all liquid evapourated.

  9. Turn off stove.

  10. Add finely chopped cilantro.

  11. Cool Stuff tortilla samosas when cool
