Recipe Ingredients for Dr. Thin's Roasted Veggies

3/4 lbs beef steak, sliced
3 cups sweet potatoes, cubed
1/2 cup yams, cubed
2 carrots, sliced
2 onions, white, cubed
2 zucchinis, cubed
1 yellow squash, cubed
3 potatoes, peeled, cubed
24 brussels sprouts
1/8 cup olive oil
1 tsp salt

Recipe Directions for Dr. Thin's Roasted Veggies

  1. Preheat oven to 425.

  2. Wash and cube all the veggies and steak into bite-size pieces except brussels sprouts.

  3. Cut brussels sprouts in half.

  4. Toss everything in large bowl with olive oil and salt. Pour out onto large pan.

  5. Roast for 40-50 minutes until veggies are tender.
