2 cups potatoes, cubed
3 cups yams, cubed
2 carrots, sliced
2 onions, white, cubed
2 zucchinis, cubed
1 yellow squash, cubed
1 cup fennel, cubed
1 red pepper, cubed
1/8 cup olive oil
1 tsp salt

Recipe Directions for Dr. Thin's Harvest Vegetable Roast

  1. Preheat oven to 425.

  2. Wash and cube all veggies into bite-size pieces.

  3. Toss in large bowl with olive oil and salt.

  4. Pour onto large baking pan.

  5. Roast for 40-50 minutes until veggies are tender.
