Delicious and filling, you can change things up by adding grilled chicken, shrimp or low fat shredded cheese.

Recipe Ingredients for Dr Phil's Grilled Vegetable Wrap

3 large zucchinis, sliced lengthwise
2 medium red onions, sliced
1 cup canned white beans, drained and rinsed
1 pimento, canned, rinced
1 tablespoon tahini
1 teaspoon lemon pepper (salt-free)
1 teaspoon ground cumin
1/2 teaspoon salt
6 whole wheat tortillas

Recipe Directions for Dr Phil's Grilled Vegetable Wrap

  1. Grill onions and zucchinis until browned and slightly soft, about 3 minutes.

  2. Place white beans, pimento, tahini, lemon pepper, cumin and salt in food processor. Blend until smooth.

  3. Spread 2.5 tablespoons of white bean puree onto each of the tortillas and top each one with 1/6 of grilled vegetables. Roll tortillas closed and serve at once, or wrap each one tightly in plastic wrap, refrigerate for 24hrs.
