Yum!! I don't even LIKE cauliflower, but this is tasty! Could be 3 very large portions.

Recipe Ingredients for Dr. Gourmet Curried Cauliflower

1 tbsp olive oil
1 tbsp curry powder
1 tsp ground cumin
5 ounces diced onions (frozen)
10 ounces cauliflower (frozen)
15 ounces diced tomatoes
1/4 tsp salt
1 fresh ground black pepper (to taste)
15 ounces chick peas (canned)
1/4 cup skim milk
1/2 cup frozen peas
1 cup brown rice

Recipe Directions for Dr. Gourmet Curried Cauliflower

  1. Place the olive oil in a large skillet over medium heat. Add the cumin and curry powder and as the pan heats up. Stir frequently.

  2. When the pan is hot add the onions and the cauliflower. Cook for about 7 minutes and add the tomatoes, salt and pepper. Stir well and cook for about 5 minutes. Add the chick peas and milk and cook for about 7 minutes.

  3. Add the peas and cook for about 3 - 5 minutes. Serve over Brown Rice.
