A recipe based on Dr. Fuhrman's "Anti-Cancer" Soup

Recipe Ingredients for Dr. Fuhrman's "Anti-Cancer" Soup

1 cup dried split peas
6 cups water
6 medium zucchini
5 pounds carrots - juiced
15 celery stalks - juiced
4 medium onions
3 leek stalks
5 cups kale
1 cup raw cashews
2 1/2 cups fresh mushrooms

Recipe Directions for Dr. Fuhrman's "Anti-Cancer" Soup

  1. Combine peas and water over low heat until boiling

  2. Reduce heat to simmer

  3. Add the following veggies whole: Zucchini (ends removed); Onions (ends & outer skin removed); Leeks (top inch of "leafy" part and roots removed; split down the middle and cleaned VERY WELL; Kale leaves (remove leaves from stalk; if you want to add the stalk, make sure to cut it up into very small pieces)

  4. Cover soup pot

  5. Juice carrots and celery then add to soup pot

  6. By this time the soup should have been cooking for 20 to 30 minutes and the zucchini, onions, leeks, and kale should be soft - remove from soup pot into blender and blend with cashews until smooth

  7. Add blended mixture back into soup pot along with mushrooms

  8. Continue to simmer and stir until total cooking time has been 2 to 2 and a half hours

  9. Serve hot, seasoned individually

  10. Decant extra into smaller containers for use during the rest of the week

  11. Enjoy!
