Recipe Ingredients for Downtown Book Barn Black Bean Hummus

1 lb dried black beans
4 tbsp Olive oil
4 tbsp Tahini
1/2 cup Lemon juice
2 tbsp Molasses
4 cloves Garlic
1/2 tsp red pepper flakes
1 tbsp Cumin
1 tsp Garam Masala
4 oz Worcestershire sauce

Recipe Directions for Downtown Book Barn Black Bean Hummus

  1. Quick-soak (1 hour) and cook (90 minutes) the black beans as directed on the bag. Draining off the soaking liquid and cooking the beans in a clean pot with fresh water won't cheat you of any flavor and makes things a lot less gassy afterward.

  2. Peel a bunch of garlic cloves. Be bold! I tend to use at least half a head of garlic -- the idea is to use enough to get the spicy aspect of the garlic in addition to the wonderful aroma.

  3. Drain the cooked beans in a colander, not bothering to rinse or reserve any liquid. No worries, there's plenty of liquid in those beans.

  4. Garlic and a splash of lemon juice get pulsed and smashed in the food processor. Drop in half of the beans while they're still hot. Then, rock out: olive oil, tahini, lemon juice, and molasses to taste; then a few dashes of Worcestershire sauce, a healthy dose of pepper flakes, and a solid dusting of dry spices. Use a strong hand with the different elements, those beans can soak up and release a lot of flavor. Innovate!

  5. Pile the rest of the cooked beans into the food processor, and whir away, folding in occasionally to get those stray bits on top.

  6. Taste and consistency will vary according to the proportions you used above. I often fiddle with the result by adding in a bit of lemon juice or olive oil or both at the end.

  7. Serve and enjoy -- the leftover portion will firm up and the flavors will continue to marry when stored in a sealed container in the fridge. Can be used for damn near anything.
