Recipe Ingredients for Downeast Maine Pumpkin Bread

15 ounces pumpkin puree
2 eggs
2 egg whites
1/4 cup vegetable oil
3/4 cup applesauce
2/3 cup water
1 cup white sugar
1 cup brown sugar
1 3/4 cup all-purpose flour
1 3/4 cup whole wheat flour
2 tsp baking soda
1 1/2 tsp salt
1 1/2 tsp ground cinnamon
1 1/2 tsp ground nutmeg
3/4 tsp ground cloves
1/2 tsp ground ginger

Recipe Directions for Downeast Maine Pumpkin Bread

  1. Preheat oven to 350 degrees F. Grease and flour 2 9x5 inch loaf pans.

  2. In a large bowl, combine pumkin puree, eggs, egg whites, oil, applesauce, water, and sugar, mixing until well blended. In a separate bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.

  3. Stir the dry ingredients into the pumpkin mixture only until just blended, and pour into the loaf pans.

  4. Bake for approximately 60 minutes. Bread is done when a toothpick inserted in center of loaf comes out clean.
