My adaptation of Fillet of Sole Bonne Fame use any flat fish like Dover sole

Recipe Ingredients for Dover sole ala Evelyn

1 lb flounder
7 oz heavy cream, reduced
1/3 cup shallots, minced
1/2 cup mushrooms, sliced
1 tbsp tarragon
2 tbsp lemon juice
4 oz white wine
1 pinch butter
1 salt and pepper to taste

Recipe Directions for Dover sole ala Evelyn

  1. brush a small amount of butter in a sautier large enough to hold all fillets folded over once.

  2. Toss shallots and mushrooms to cover the bottom of pan then fold each fillet once and place on top of veggies.

  3. Add white wine - just go up half way up each folded fillet.

  4. Poach the fish by covering the sautier tightly and bringing to a simmer. Poach just until the fish is half done - about 3 - 4 minutes.

  5. Meanwhile, reduce cream to about half in a saucier.

  6. When fish is done, remove the fillets to a shallow baking dish and keep warm - make sure all liquid is drained from fish.

  7. Increase heat and reduce the poaching liquid by about half.

  8. Add the reduced cream and continue reducing until napant.

  9. Pour the sauce over the fish and place under the broiler to reach glacage - about 2 - 3 minutes.
