Modified fro a great vegweb.com recipe. The original called for hominy. I substituted some boca meatless crumbles. It works really nicely

Recipe Ingredients for Douglas Chili (Modified VegWeb recipe)

1 tbs olive oil
2 medium yellow onions
1/2 tablespoon chili powder
1/2 teaspoon cumin
1/4 teaspoon coriander
10 oz kidney beans
10 oz black beans
16 oz tomato sauce
10 oz can diced tomatoes
1 dash of cinnamon
1 tablespoon peanut butter (blended with hot water)
6 oz chopped chilies
10 oz Ground Crumbles Meatless

Recipe Directions for Douglas Chili (Modified VegWeb recipe)

  1. Saute the onions with half the chili powder, cumin and coriander in the corn oil.

  2. Dump everything into a 3 quart soup pan or crock pot and add enough water to your liking. I usually fill up the pot.

  3. Cook on medium heat (low on the crock pot) until the the broth turns a nice brick red color (about 8 hours or so in the crock).
