from Esther Burnside Taste of old fashioned cinnamon sugar doughnuts.

Recipe Ingredients for doughnut muffins

1 3/4 cup flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/4 teaspoon cinnamon
2/3 cup sugar
1/3 cup oil
1 egg
3/4 cup 1% milk
1/4 cup butter
1/2 cup sugar
1 tablespoon cinnamon

Recipe Directions for doughnut muffins

  1. Sift together first 6 ingredients

  2. Beat egg. Stir in milk and oil.

  3. Add wet ingredients to dry, stirring only until moistened.

  4. Divide among 24 mini muffin cups.

  5. Bake at 350 for 20-25 min.

  6. Mix 1/2 cup sugar with 1 tablespoon sugar in small bowl. Melt butter in another small bowl.

  7. Allow muffins to cool enough to handle. Dip each into melted butter then in cinnamon sugar.
