Chick Pea Fritters from Trinidad. Top off with Doubles Filling

Recipe Ingredients for Doubles (Fritters)

2 cup Wheat Flour, White, All-purpose, Enriched, Bleached
0.5 tsp Salt, Table
1 tsp Curry Powder
1 tsp Cumin
0.5 tsp Pepper, Black
5 grams Yeast
0.33 cup (8 fl oz) Water
0.25 tsp Sugars, Granulated
1 1tsp Olive Oil

Recipe Directions for Doubles (Fritters)

  1. In a bowl, combine flour, salt, curry powder, and cumin

  2. In a separate bowl, place warm water, sugar, yeast, and let stand for 5 minutes.

  3. To the flour mixture, add the yeast mixture and enough water to make a slightly firm dough.

  4. Mix well, cover with a damp cloth and allow to rise for 1.5 hours.

  5. Punch down dough and allow to sit for another 15 minutes

  6. Take a tablespoon of the dough and shape into flat round pieces 4 inches in diameter. (Use oil on hands so dough won't stick to them)

  7. In a skillet, heat olive oil.

  8. Fry each fritter until puffy (about 15 seconds per side). Drain on kitchen paper.
