Filling for Doubles from Trinidad.

Recipe Ingredients for Doubles (Filling)

14 oz Chick Peas
1 tbsp Curry Powder
3 clove Garlic
1 medium (2-1/2" dia) Onions
1 tbsp Olive Oil
2 tsp Cumin
1 tsp Sauce, Ready-to-serve, Pepper, Tabasco
1 tsp Salt, Table
1 tsp Pepper, Black

Recipe Directions for Doubles (Filling)

  1. Heat oil in skillet. Add chopped onion, minced garlic, curry powder and 1/4 cup of water.

  2. Sauté for a few minutes

  3. Add drained chick peas, stir to coat and cook for 5 minutes.

  4. Add 1 cup of water, cumin, salt and pepper; cover, lower heat, and simmer until the peas are very soft (20-30 minutes).

  5. Add tobasco sauce and salt.

  6. Use to top off Doubles Fritters.
