Recipe Ingredients for Double Squash Cornbread Supper

2 cups grated zucchini
1/2 teaspoon salt
1 cup corn meal
3/4 cup flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
2 large eggs, slightly beaten
3/4 cup tofu (silken)
1/4 cup canola oil
2 teaspoon ground cumin
1 tablespoon chili powder
1 onion diced
1 bell pepper
2 poblano peppers
1 medium squash (Summer)
1 1/2 cups black beans

Recipe Directions for Double Squash Cornbread Supper

  1. Grate the zucchini & spinkle with sale in colander.

  2. Preheat oven to 425.

  3. Saute oonion, pepper, chili & yellw squash until softened.

  4. Add cumin and chili pwder.

  5. Add beans.

  6. Transfer to baking dish.

  7. Mix dry ingredients -- coornmeal, flour, sugar, baking sda & baking pwder.

  8. Add slightly beaten eggs, tofu and oil. Mix weell.

  9. Squeeze excess water from zucchini; and to cornbread mixture. Spread on top of chili mix.

  10. Bake at 425 fro 20 - 25 minutes.

  11. Let rest for five minutes before serviing.
