Recipe Ingredients for Double Ginger Crackle Cookies - Healthier Alternative 2

2 cup whole wheat flour
2 tsp ground ginger
1 tsp baking soda
1/4 tsp salt
3/4 c butter substitute - stick
1/2 c Splenda (plus the following measurements to equal 1-1/3 c sugar)
2 tbsp Splenda
2 tsp Splenda
1 egg
1/4 cup agave syrup
2 tbsp finely chopped candied ginger - plus.
2 tbsp finely chopped fresh ginger

Recipe Directions for Double Ginger Crackle Cookies - Healthier Alternative 2

Cream butter substitute and Splenda, add egg, agave and chopped ginger.  Combine dry ingredients and mix in well.  Form into small balls (about 1 to 1-1/4") and roll in sugar.  Bake at 350 for 12 minutes - take out when dry on top, but still very soft.  Best when still warm - will get firmer as they cool.Makes about 3 dozen.
