Recipe Ingredients for Double Decker Pumpkin Bread

4 ozs. fat free cream cheese
1/2 cup brown sugar
8 ounces fat free sour cream
1/4 cup egg substitute
2 tablespoons crystallized ginger
3 cups Whole Wheat Pastry Flour
1/2 teaspoon salt
2 teaspoons baking soda
2 teaspoons pumpkin pie spice
2 cups sugar
1 cup egg substitute
15 oz. canned pumpkin
1 cup unsweetened applesauce
1/3 cup water

Recipe Directions for Double Decker Pumpkin Bread

  1. Preheat overn to 350

  2. Grease bottoms and a 1/2 inch up sides of two 9x5x3 loaf pans

  3. In medium bowl combine cream cheese and 1/2 cup sugar. Beat with mixer till combined. Add sour cream and 1/4 cup egg substitute, mix well. Stir in 2 tablespoons crystallized ginger. Set aside

  4. In another medium bowl stir in flour, pumpkin pie spice, salt and baking soda. Set bowl aside

  5. In a large bowl combine 1 1/2 cups sugar, 1/2 cup brown sugar, 1 cup egg substitute, pumpkin, applesauce and water. Beat on low speed till combined, scraping sides occassionally. Gradually add the flour mixture beating until well combined.

  6. Spoon 1 1/2 cups pumpkin batter into each loave pan.

  7. Divide cream cheese mixture between the two pans spreading evenly.

  8. Spread remaining batter into both pans.

  9. Bake 60-70 minutes or till toothpick inserted in middle comes out clean.

  10. Remove from pans and allow to cool completely on wire racks. Wrap in plastic wrap and REFRIGERATE UNCUT LOAVES OVERNIGHT.Next day slice loaves. Keep any leftover loave in refrigerator up to one week.
