Recipe Ingredients for Double Coconut Chicken

1 cup coconut milk
1/4 cup panko bread crumbs
1/4 cup unsweetened coconut
3 tablespoons extra-virgin olive oil
1 dash of salt
1 dash of pepper

Recipe Directions for Double Coconut Chicken

  1. Dredge chicken with coconut milk, coconut shreds and panko

  2. Brown on stove top

  3. Bake until crispy

  4. Finish in skillet with coconut milk

  5. Serve with rice
