A few tweaks take this store-bought cake mix up a notch to make super chocolatey, nutty cupcakes.

Recipe Ingredients for Double Chocolate Walnut Cupcakes

1/2 cup unsweetened applesauce
1 cup water
2 oz bourbon
1/4 cup canola oil
517 grams chocolate cake mix
80 grams walnuts, divided
2/3 cup powdered sugar
2 tbsp 1% milk
70 grams Smart Balance spread
70 grams cocoa powder
1 3/4 oz semisweet baker's chocolate
1 tsp almond extract
25 grams plain lowfat yogurt

Recipe Directions for Double Chocolate Walnut Cupcakes

  1. Preheat oven to 350 degrees F.

  2. Lay cupcake papers in 18 cupcake cups.

  3. In a large mixing bowl, beat together applesauce, water, bourbon, and oil.

  4. Beat in cake mix.

  5. Stir in walnuts, reserving 18 large pieces for later.

  6. Ladle batter into cupcake papers up to 1/4" from the top.

  7. Drop cupcakes to release air bubbles.

  8. Bake cupcakes for 20 to 25 minutes, or until knife inserted in center comes out clean.

  9. While cupcakes are baking, mix the icing.

  10. Melt chocolate in a large, microwave-safe bowl, usually 40% power for about 2 minutes.

  11. Beat together melted chocolate and Smart Balance.

  12. Add plain lowfat yogurt.

  13. Gradually beat in powdered sugar.

  14. Add milk.

  15. Gradually beat in cocoa powder.

  16. Add almond extract.

  17. Beat until smooth, adding more milk to thin if necessary.

  18. When cupcakes are done, turn them out and flip right-side-up. Allow to cool.

  19. When cupcakes are cool, spread with icing.

  20. Top each cupcake with one reserved walnut piece.

  21. Serve with milk or coffee.
