Dark cocoa powder gives these muffins a rich blast of chocolate - no icing, and the calories aren't too bad, one a day. :)

Recipe Ingredients for Double Chocolate Muffins

2 cups flour
1 cup cocoa
1 cup sugar
1/2 tsp salt
1 tbs baking powder
1/2 tsp baking soda
1 1/2 cups milk
1 large egg
1/2 cup melted butter
1 tsp vanilla extract
1 cup semi-sweet chocolate chips

Recipe Directions for Double Chocolate Muffins

  1. Preheat oven to 400 degrees.

  2. Prepare muffin tins with paper liners, to save a few calories.

  3. Sift together flour, cocoa, baking powder, soda into mixing bowl.

  4. Blend in sugar and salt, to be sure all the dry ingredients are well mixed.

  5. In a smaller bowl beat milk, egg, vanilla extract together to blend.

  6. Add wet ingredients to dry, with the mixer on low, then add the melted butter, scraping the sides often, until mixed.

  7. Lastly blend in the chocolate chips.

  8. Fill muffin cups 2/3 full.

  9. Bake at 400 degrees for 20 minutes.

  10. 18 medium sized muffins.
