Recipe Ingredients for Double Chocolate Chunks

1/2 c. Smart Balance
1 1/3 c. brown sugar
3/4 tsp. baking powder
1/2 tsp. salt
1/2 c. egg beaters
2 tsp. vanilla
2/3 c. cocoa
1 1/2 c. white whole wheat flour
2 c. semisweet chocolate chips

Recipe Directions for Double Chocolate Chunks

  1. Preheat oven to 350F. Line two cookie sheets with parchment.

  2. In a medium bowl, cream together butter, sugar, baking powder, espresso powder, and salt. Add eggs and vanilla, beating until smooth. Stir in cocoa powder, then flour; dough will be stiff. Mix in chocolate chips.

  3. Drop cookies by tablespoonfuls onto prepared baking sheets, leaving about 1 1/2" between them. Bake cookies for 10 minutes. Remove from oven, and allow them to cool on the pan.
