Makes 12 muffins or 36 mini muffins, as per the recipe in the book (**Note** when I made this, I filled 2x 24 mini muffin tins with mixture left over for another 3-4 cakes, so I have split into 50 portions)

Recipe Ingredients for Double Chocolate Chip Mini Muffins

300 g Plain Flour
200 g Light Brown Sugar
2 tbs Cocoa Powder
2 tsp Bicarbonate of Soda
1/2 tsp Salt
350 ml Milk
75 g Butter, melted
2 eggs, lightly beaten
150 g Milk Chocolate

Recipe Directions for Double Chocolate Chip Mini Muffins

  1. Preheat the oven to 200c/400f/gas mark 6. Grease a 12-cup muffin tin or line the cups with paper muffin cases.

  2. Mix the flour, sugar, cocoa powder, bicarbonate of soda and salt in a large bowl. In a separate bowl or jug, mix together the milk, melted butter and eggs.

  3. Add the wet ingredients all at once to the dry ingredients and mix until just combined. Fold in the chocolate chips.

  4. Spoon the batter into the prepared muffin cups, dividing it evenly. Bake in the oven for about 12 mins (20 mins for normal muffins), or until well risen. Cool in the tin for 5 mins, then turn out onto a wire rack. Serve warm or cold.
