Recipe Ingredients for Double Berry Muffins

2/3 cups whole wheat flour
2/3 cups all purpose flour
1 cup oats
1/4 cup Fiber One, crushed to a powder-like state
2 tablespoons brown sugar
1 tablespoon Splenda
1 tablespoon baking powder
1/2 teaspoon cinnamon
1 cup Almond Breeze
1/4 cup Egg Beaters
2 tablespoons vegetable oil
1 tablespoon applesauce
1 cup blueberries
3/4 cup raspberries

Recipe Directions for Double Berry Muffins

  1. Preheat the oven to 425 F.

  2. Line the cups of a muffin pan with paper liners and spray with nonstick cooking spray like Pam.

  3. Combine flour, oats, brown sugar, Splenda, Fiber One, baking powder, and cinnamon in a large mixing bowl.

  4. 4.In another bowl, combine Almond Breeze, Egg Beaters, applesauce, and oil. Whisk together.

  5. 5.Add the wet mixture to the flour mixture in the large bowl. Stir until combined.

  6. 6.Fold in berries.

  7. 7.Spoon the mixture into the muffin cups, approximately 2/3 full.

  8. 8.Bake for 25 to 30 minutes or until light golden brown.
