This is my Mam's recipe and is delicious but bears no resemblance to the genuine thing as served in Dorset, England.

Recipe Ingredients for Dorset apple cake

1/2 lb flour
1/2 lb apples
1/4 lb margarine
1/4 lb sugar
1 teaspoon cinnamon
1 1/2 teaspoon baking powder
1 pinch of salt
1/2 tbsp sugar

Recipe Directions for Dorset apple cake

  1. Heat the oven to gas 4, 350F, 180C. Line an 8" square tin with greased paper.

  2. Prepare apples (Bramley cookers are best) by peeling, coring and chopping into smallish pieces. Mix with the sugar and cinnamon and cover with a plate.

  3. Sieve flour with the salt and baking powder.

  4. Rub in the margarine to breadcrumb texture. Mix in the apples then press into the lined tin.

  5. Sprinkle top with sugar.

  6. Cook on a low shelf for 1 hour. NB Allow to cool completely. Very crumbly so take care when removing. Cut in half, then each half into four
