This is the cornbread I make in a small cast iron skillet using Miracle Whip.

Recipe Ingredients for Donna's Reduced Fat Cornbread

1 1/2 cups cornmeal
1 egg
1/3 cup Miracle Whip
1 cup Buttermilk

Recipe Directions for Donna's Reduced Fat Cornbread

  1. Place skillet in oven and preheat to 425 degrees.

  2. In the meantime, mix all 4 ingredients in a medium size bowl.

  3. When the oven is through preheating, take the skillet out and pour the mixture into the skillet. Return the skillet to the oven.

  4. Bake for 30 minutes or until golden brown.
