Recipe Ingredients for Dominican Stewed Beef

1 green pepper
1 onion
3 cloves garlic
1 t capers
1 T parsley
1 T vinegar
2 t salt
1/2 t oregano
1/8 t pepper
2 lbs beef
1 T tomato paste
2 1/2 c water
1/2 c vegetable oil

Recipe Directions for Dominican Stewed Beef

  1. Chop the green pepper, onion, garlic, and capers very finely.

  2. Mix with all other ingredients except beef, tomato paste, water, and oil.

  3. Marinade the beef in this mixture for at least an hour. Transfer the beef along with the marinade to a large pot.

  4. Dissolve the tomato paste in water, then pour this into the pot along with the oil.

  5. Bring to a boil, then simmer for about 1 ½ hours or until the beef is tender.
