Recipe Ingredients for Doloris Greschaw's Rhubarb Bread - revised

1/2 cup skim milk, room temp
1 1/2 tsp lemon juice
1/2 cup brown sugar, firmly packed
1/3 cup canola oil
1 egg
1/2 tsp vanilla
1 1/4 c white flour, sifted
1/2 tsp salt
1/2 tsp baking soda
8 oz rhubarb, diced small and dusted w/ flour
1/3 cup walnuts, chopped

Recipe Directions for Doloris Greschaw's Rhubarb Bread - revised

  1. set oven to 350

  2. combine milk and lemon juice and set aside for 5 minutes

  3. Combine brown sugar, oil, egg and vanilla - beat until smooth

  4. In another bowl, sift together flour, salt and baking soda

  5. Add flour mixture alternately with soured milk into sugar mixture

  6. Fold in rhubarb and walnuts

  7. pour into loaf pan

  8. Cook 50 minutes to 1 hr
