Delicious oat pear scones that stick to your ribs, and hold their moisture so they don't dry out too soon. Spectacular just out of the oven.

Recipe Ingredients for Dollar-bag Pear Scones

1 cup all-purpose flour
1 cup oats (quick or old fashioned, uncooked)
1/3 cup sugar
1 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt (optional)
4 tablespoons butter, chilled (if you use salted butter, omit the salt)
1/3 cup buttermilk (I use milk soured with vinegar)
1 egg
1 1/2 teaspoon vanilla
1 cup chopped, peeled fresh pears

Recipe Directions for Dollar-bag Pear Scones

  1. Heat oven to 400F.

  2. Lightly spray large cookie sheet with no-stick cooking spray.

  3. In large bowl, combine dry ingredients, reserving 2 teaspoons sugar for topping.

  4. Cut in margarine with pastry blender or two knives until mixture resembles course crumbs.

  5. In separate bowl, combine yogurt, egg whites and vanilla; mix well.

  6. Add to dry ingredients; mix just until moistened.

  7. Gently stir in chopped pear until evenly distributed.

  8. Turn dough onto a well-floured surface. Knead dough by folding and gently pressing dough for 8 to 10 strokes or until dough holds together and is no longer sticky. Divide into two; pat or lightly roll one ball of dough 1 inch thick.

  9. Cut into six wedges, place on pan (not touching; far for scones being eaten immediately (more crispy!) or within 1cm for scones for storage). handle dough gently; don?t overwork.

  10. Arrange scones on an ungreased baking sheet. Bake for 14 to 18 minutes or until brown. Serve warm. Makes 12 scones.
