This recipe is from the Biggest Loser Book. It is the invention of Dr. Jeff Levine. Great for quick warm ups. Serving size is 1 Cup.

Recipe Ingredients for Doc's Chili

3 cups yellow onion
1 1/4 pounds lean ground turkey
3 cups diced tomatoes
1 1/2 cups cooked pinto beans
1 1/2 cups cooked black beans
1 cup fat free chicken broth
2 T chopped garlic
2 T chili powder
1 T chopped oregano
1 t ground cumin
1 t mustard powder
1/2 cup black olives
1/2 cup cilantro

Recipe Directions for Doc's Chili

  1. Coat a large saucepan or Dutch oven with a few sprays of olive oil cooking spray.

  2. Add the onions and cook over medium-high heat until they're soft and just starting to brown.

  3. Add the ground turkey or sausage and cook over medium-high heat, breaking up the meat with a spoon, for about 6 minutes, or until no longer pink.

  4. Add the tomatoes, pinto and black beans, broth, garlic, chili powder, oregano, cumin, and mustard powder.

  5. Bring to a boil over high heat, then reduce the heat to low.

  6. Cover and simmer for 20 minutes.
