Recipe Ingredients for Dixie's Corn Risotto

2 cups fresh corn
32 ounces reduced-sodium chicken broth
1 cup Arborio Rice
1/2 cup diced red onion
2 tablespoon Unsalted Butter
1/2 teaspoon dried basil
3 tablespoons grated Parmesan Cheese

Recipe Directions for Dixie's Corn Risotto

  1. 1. Place corn in large microwave-safe bowl with remaining ingredients (except cheese). Cover and microwave on HIGH 10 minutes.

  2. 2. Stir once, cover again and microwave for 15 more mintues.

  3. 3. Stir in Parmesan cheese; rice will thicken as it stands. Serve.
