Recipe Ingredients for Divine Turkey Divan

4 cups chicken broth
16 oz turkey breast cutlets, 4 @ 4 oz each
1 small onion
1 tbsp olive oil
2 tbsp flour
2 tbsp icbinb light
1 cup chicken broth
1/2 cup fat free evaporated milk
1/4 tsp ground nutmeg
1 lb broccoli spears
4 slices provolone

Recipe Directions for Divine Turkey Divan

  1. Bring 1 qt broth to a boil in a wide, deep skillet with lid Add turkey breasts and bring broth back to a boil. Reduce heat to low, cover and poach turkey, 8 minutes.

  2. In a skillet, saute onions in oil and butter for 2 minutes. Sprinkle in 3 tbsp flour and cook 1 minute. Whisk in 1 cup broth and reduce by half, about a minute.

  3. Ladle in chicken broth, whisking sauce as you do.

  4. Stir in 1/2 cup evaporated milk. Season with nutmeg, salt and pepper. Bring to a bubble and reduce heat to low.

  5. Slice turkey into 1/2" strips and add to the pan, coating them in sauce.

  6. Preheat the broiler.

  7. To assemble, simmer broccoli spears in 1 inch of water, covered for 5 minutes. Drain and transfer to a shallow baking or casserole dish.

  8. Layer on hald the provolone and half of the turkey recipe. Top with the remaining provolone and brown until bubbling and golden under preheated broiler, about 2 minutes.
