Recipe Ingredients for disappearing zucchini orzo

5 cups zucchini
1/4 cup oil, extra virgin olive
1/2 cups Parmesan cheese
1 red onion

Recipe Directions for disappearing zucchini orzo

  1. cook the onion in the oil.

  2. add the zucchini. cook until a little golden.

  3. add oregano, thyme, salt and pepper.

  4. add in orzo (1.5 cups dry, cooked in several cups water for 10 minutes).

  5. add parmesan.

  6. eat cold or warm, not hot.
