Recipe Ingredients for Dirty South Vegetable Soup

28 oz Tomatoes
2 serving Kroger Chicken Broth, Fat-Free 33% Reduced Sodium
3.5 serving Kroger Black Eyed Peas (canned)
1 cup Corn, Sweet, Yellow
3 cup, chopped Collards
2 cup slices Okra
1 medium raw Onion Yellow
1 cup Rice, Brown, Medium-grain, Cooked
3 medium Carrots
2 clove Garlic
2 1tsp Olive Oil

Recipe Directions for Dirty South Vegetable Soup

Heat olive oil in a big pot on medium heat. Chop onions and sautee until half-cooked, then add chopped carrots and chopped collards. Once everything is a little wilted, throw in all the other veggies with their canning liquid, plus the chicken broth. Top off with water until everything is mostly covered. Add 2 chopped garlic cloves and a bay leaf. If your rice is already cooked, wait to add it until the end, along with some turmeric and coriander to taste. Serve with cornbread and hot sauce (Sriracha or Texas Pete are my favorites).
