my favorite dinner salad combination

Recipe Ingredients for Dinner salad

1 1/2 cups romaine lettuce
1 cup spinach
1 small carrot
2 tablespoons diced onion
1/4 cup frozen corn
4 ounces cooked sweet potato
2 sprays cooking spray
2 ounces cucumber slices
1/8 cup light sour cream
1/4 cup salsa

Recipe Directions for Dinner salad

  1. Chop peeled sweet potato to 1/4" cubes, spray with cooking spray.

  2. Spread in microwave safe glass pie plate. Microwave for 3 minutes, stir (carefully, it will be hot).

  3. Microwave for 3-4 additional minutes until sweet potatoes are tender. Let cool.

  4. Mix torn lettuce, spinach, diced carrot, onion, and cucumber.

  5. Heat frozen corn in microwave safe bowl till cooked.

  6. Stir sour cream and salsa together.

  7. Toss all vegetables together.

  8. Serve salad with sour cream/salsa dressing.
