Fluffy rolls that compliment dinner and are excellent reheated in the morning with a quick glaze for a sweet treat.

Recipe Ingredients for Dinner Rolls

3 tsp active dry yeast
1 tsp sugar
1/4 cup water
1 cup 2% milk
3 tbsp butter
1/4 cup sugar
1/2 tsp salt
4 cups all purpose flour
3 tbsp wheat gluten flour
1 egg
1 egg yolk
1 tbsp melted butter

Recipe Directions for Dinner Rolls

  1. Combine with 1/4 cup warmed water (105 to 115) and 1 tsp sugar. Let stand until 10 minutes (or doubled in volume).

  2. In a small saucepan, dissolve butter, sugar, and salt in milk over low heat. Let mixture cool to 115.

  3. In a large bowl combine 2 cups flour with 3 tbsp gluten flour. Pour in proofed yeast and milk mixture. Stir together, then add eggs. Stir batter vigorously for 2 to 3 minutes until it is smooth.

  4. Stir in remaining flour 1/2 cup at a time until dough is workable. It will be smooth and quite soft. Turn to a well floured surface and knead for 10 minutes, adding flour to hands and surface as needed to keep dough from sticking. The finished dough should be smooth and elastic, not floury, and should blister when pulled.

  5. Place dough in a large greased bowl, turning to grease the top of the dough. Cover loosely with plastic wrap then paper towel. Allow to rise in a warm (preferrably steamy) place, such as the oven or microwave. To create steam microwave shallow bowl with water and place in oven 5 minutes before adding dough. Allow dough to rise 1 or 1 1/2 hours until double in volume.

  6. Punch down the dough in the bowl to remove air pockets. Divide in 16 pieces, shaping each into a ball. Pull the side of the ball, then tuck under and pinch to the bottom. Place rolls in greased 13x9 cake pan or in round cake pans. Brush with melted butter, then cover and allow to rise in a warm place until double in volume, about 30 minutes (rolls will be touching).

  7. Bake rolls at 375 for 18 to 20 min, brushing with melted butter once they are done. Serve hot or allow to cool on racks.
