Makes a festive dinner served out of pumpkin

Recipe Ingredients for Dinner in a Pumpkin

1 Winter Squash (medium sugar pumpkin about 12 inches)
1 1/2 pounds lean ground beef (93%)
1 Onion
1 clove of garlic
1 1/2 teaspoon splenda
1 1/2 teaspoon Italian seasoning
1 1/2 teaspoon salt
1/8 teaspoon ground black pepper
4 cups tomato juice
3 cups shredded cabbage
8 ounces green beans
1 cup uncooked brown rice

Recipe Directions for Dinner in a Pumpkin

  1. Preheat oven to 350 degrees

  2. Wash pumkin, cut off top, scrape out seeds and discard

  3. brown ground beef in large skillet, drain fat, add onion chopped, and garlic minced and continue to sautee till onions are translucent

  4. add splenda, Italian seasoning, salt, pepper, tomato juice and rice; mix thoroughly

  5. layer inside of pumkin with 1/3 cabbage, green beans, beef and rice mixture

  6. continue layers, replace lid and bake for 2 to 3 hours
