Amazingly filling main course or use as a side with soup

Recipe Ingredients for Dinner Frittata

1/2 lb. asparagus
6 oz. mushrooms
1 tbsp olive oil
1 clove garlic
1/4 onion
1/2 zucchini
2 cups egg beaters
1/2 c. fat free milk
1 cup diced potato
1 cup broccoli
1/2 tsp. salt
1 tbsp. chives
1/4 c. 2% cheddar cheese

Recipe Directions for Dinner Frittata

  1. In 10 in skillet add potato, broccoli, onion and 1/4 c of water. Cover. Cook over medium heat until potatos are tender; 15 minutes or so. If necessary continue cooking until all water is evaporated.

  2. In medium bowl, beat egg beaters, milk, salt, and pepper until completely blended. Saute zucchini chunks, asparagus, and mushrooms in olive oil until all are tender. Add to the egg mixture in bowl and pour over items in skillet. Cover skillet. Cook until eggs are firm over low medium heat; 20 minutes. Sprinkle with cheese and wrap handle if necessary with aluminum foil. Bake until completely cooked through on 325; maybe 15-20 more minutes. Take out and cool completely. Cut into wedges and serve with garnish of chives. Add toast, garlic bread, or a cup of soup for completely rounded meal.
