I use this basic falafel recipe, but just shape and bake the patties. It isn't exactly falafel, but it makes a nice dinner when served with pita and garnished with tzatziki, onions, cucumber and anything else you like.

Recipe Ingredients for DINNER - Falafel from epicurious - baked

2 cup chickpeas, dried
1 cup onion, roughly chopped (about 1/2 large onion)
2 tbsp parsley, finely chopped
2 tbsp cilantro, finely chopped
1 tsp salt
1 tsp red pepper, dried hot
4 cloves garlic
1 tsp cumin
1 tsp baking powder
1/4 cup flour

Recipe Directions for DINNER - Falafel from epicurious - baked

  1. Put the chickpeas in a large bowl and add enough cold water to cover them by at least 2 inches. Let soak overnight, then drain. Or use canned chickpeas, drained.

  2. Place the drained, uncooked chickpeas and the onions in the bowl of a food processor fitted with a steel blade. Add the parsley, cilantro, salt, hot pepper, garlic, and cumin. Process until blended but not pureed.

  3. Sprinkle in the baking powder and flour, and pulse. You want to add enough bulgur or flour so that the dough forms a small ball and no longer sticks to your hands. Turn into a bowl and refrigerate, covered, for several hours.

  4. Form the chickpea mixture into balls about the size of ping pong balls. Flatten them out slightly and place them on a pan covered in aluminum foil and sprayed with cooking spray.

  5. Bake at 450 degrees until nicely browned.
